Many people choose high shear emulsifying machine to emulsify when they are making liquid emulsifying products. Others choose high-speed dispersing machine to disperse high speed to achieve the purpose of emulsification, and others choose static mixer (pipe mixer) for mixing emulsification.
Is it possible to obtain a stable product when a high shear emulsifier is used to emulsify the emulsification machine or the pipe mixer after the emulsification of a high shear emulsifier is often encountered? The answer, of course, is negative.
After the forced shear emulsification of a high shear emulsifier or other emulsifying equipment, a more homogeneous mixture of emulsions can be obtained, which may stabilize in a certain period of time, but after a certain period of time, the product begins to be stratified. The reason is that the mixture is unstable, especially incompatible two or more liquids. Therefore, we must use a high shear emulsifier or other emulsification equipment when forced emulsification, we must choose a certain amount of the corresponding model of emulsifier (stabilizer).
Emulsifier is usually a surface active agent. The molecular structure contains hydrophilic group and hydrophobic group. The emulsifier can reduce the free energy between the dissoluble phase boundary and prevent the aggregation between dispersed particles by steric resistance or electrostatic repulsion, thus stabilizing the emulsion mixture.
